Tamale pie. I promised myself I wouldn't cook while my hubby is away, but came across a recipe for tamale pie. It sound so yummy about now. For the cornbread crust on top, I use millet grits in place of the cornmeal. You literally can't tell the difference in taste.

I cant even decide what to make today lol Yesterday I made ricotta cheese and spinach stuffed cannelloni with a cream and rose sauce mixed together, and of course baked cheese on top :)

It's hard to top that one faithy. Sounds delicious.
Change of plans here. I put the chicken in the fridge until tomorrow because hubby called and said he won't be home for dinner tonight. So I will have some spaghetti and a salad tonight.

I had petit sirloin steak pre-seasoned by the store - what a deal: buy 1 get 3 free! I froze 3 of them; had potato salad along with - it was truly yummy. Oh, and melon bites, too.

I made a wonderful eggs Florentine this afternoon :) a friend of mine gave us fresh eggs from her chickens the other day, it turned out great :)
