I say dinner, hubby says hors d’oeuvres*
Tofu, mushroom stroganoff with udon noodles on a bed of baby kale and spinach with steamed cauliflower, broccoli and carrots on the side.
*So, when my hubby sees the box of tofu being pulled out of the fridge, he immediately starts snacking, to fill himself up! Don’t get me wrong. He loves tofu, it just doesn’t give him the warm, fill you up feeling! And out here in farm and ranch country he gets a lot of sympathy. So, I am going to call this hors d’oeuvres, for tonight, not supper.  |

Lol, I'm surprised the grocery stores in your town sells tofu. I bet you are the talk of the town.
Nachos with ground beef.

I have moved up from the “r” word  to eccentric! LOL! I keep them on their toes. I have to drive 35 miles for tofu! LOL!
Hubby made a frozen enchilada tin box dinner. Not bad! I love coming home to dinner! |

We will have leftovers for the next 3 nights. Tonight is a fresh pizza with already prepared ingredients. Tomorrow is spaghetti with a red meat sauce and the third night is nachos again.
