As we're discussing cost here's another cheap one, what I made tonight. Steamed eggplant slices in warmed balsamic vinaigrette (sprinkled with sesame seeds), steamed buttered fresh green beans, and garlic-parmesan red mashed potatoes with nutritional yeast gravy.

Cost: $5 (nutritional yeast, sesame seeds and vinegar already at hand in the cupboard)

Also this yields plenty of leftovers so it's more like $2.50 or $3 a serving, a few meals like this make it easier to really explore the more expensive recipes and ingredients if you want.

Can't stand Merlot but it was all I had to add.

The gravy was out of this world, and I wasn't even thinking about it.

I feel almost wifely. Scary. I'll believe it when I see it, haha.

Oatmeal with macadamia milk, cacao powder, peanut butter and strawberries

Wholegrain wheat free wraps with cashew cheese (cashews, nutritional yeast and lemon) watercress, red pepper, vine tomatoes, cucumber, beetroot and avocado

Smoothie with pineapple, banana, carrot, berries, milled seeds, small amount of broccoli

Wow this is some really great ideas, I been trying to eat more healthy lately and this thread is a great help :) today I am having strawberry, blackberry, blueberry and cherry smoothies, fried rice with veggies for supper :)

Yesterday I made some 'energy balls' with dates, soaked cashews, cacao powder, unsulphured apricots and vanilla essense and then rolled them in dessicated coconut (such a great snack) you just put it all in the blender and roll them into balls and today I had a watermelon, spinach, kiwi, banana and mixed milled seed & goji berry smoothie

Also I cook everything myself and with good planning and an open mind you can make delicious food that can also be inexpensive and not time consuming. I love to freeze fresh produce on sale for instance.

Those energy balls sound really good, figaromelting. Reminds me that I've got to start trying out all of these different vegan snack recipes I have accumulated. :)

You can definitely have it, Tobi!!

This morning: Diced peaches and Yerba tea; forgot to take my supplements. :(

18 ounces of water with gym workout, another 16 ounces of water in an apple cider vingear cocktail to kill bacteria and other harmful organisms afterward.

Supper was a light salad of greens, grated carrot and radish with some sweet corn on the side, and a chocolate vegan protein shake.

I had rice cereal with rice milk and peaches; gluten free toast with honey and blackberry jam; Chai Rooibos with rice milk and vitamins; macadamia nuts; a plain toasted rice cake; carrot sticks; a bit of chewy rice.
