'Ethics' are (or IMO should just be) 'principles' aimed at maximizing the experience and expression of Love and Joy in whatever context one 'finds' oneself in. That's why vege moralism isn't ethical in a universal sense. I concur that the vege/vegan ethical argument is plausible and valid within the modern agricultural context. The pretense that veg diet indicates some sort of spiritual height is pretty pretentious, though, because then we're speaking universals and not cultural contexts - and as you point out, veg dieting isn't universally applicable.
