Some Pagan Nomenclature

Sunday is the Suns Day
Monday is the Moons Day
Tuesday is Tyr's Day
Wednesday is Wodens Day
Thursday is Thor's Day
Friday is Freya's Day
Saturday is Saturns Day
Christmas is Yule
Easter is Ostara
Halloween is Samhain
Valentines day is Imbolc
May Day is Beltane

A summary of what is celebrated, if anything, on the holidays & any significant days of the week would be interesting.

The days of the week take their names from Pagan Gods and Goddesses

Tyr, Freya, Woden (Odin in Norse mythology) and Thor.

The remaining days are taken from as you have gathered, The Soon , The Moon and Saturn.

That's actually not supported by much evidence if I recall. Imbolc customs are very different from St. Valentine's day. The actual day that was probably co-opted by the Church would be Candlemas, since it's celebrated on roughly the same day as Imbolc, and has similar folk traditions.

Now I'll add some I know

January is the month of Janus
March is the month of Mars
June is the month of Juno

That's all I can come up with off the top of my head.
