What Is It That Survives Death??
Not got this nailed down yet!
Is it just the mind/consciousness that survives?
Or is there really an actual spirit body that separates, and is that independent of the mind or is it created by the mind??
I can buy into the mind surviving death and creating an illusion of a body but I struggle with the notion of an actual spirit body somehow

you should learn astral projection. It's good to read but by personally experience it, you will know whether there's a spirit body. For all those projected, the spirit body is real :-)

The soul is what survives death the life and personality that we have now I'd just one small fraction of our soul.

Heh. My take on this is that we are body, mind and spirit. The body is just a temporary building that is built then eventually crumbles away. Our mind is a hodgepodge of signals received from all directions including our genes and our soul and our energy fields,then processed, stored and some times sent out to the world from our bodies. Most of the mind perishes too when the body does. But our souls endure. They contain essential things like memories of our experiences and of our dear ones, our personal morals such as they are, our core emotions, the blueprint of who we are. Once we leave our physical bodies our souls move on to the other side immediately or after a little time, and when I have moved over to the other side I will still be me even if my surroundings and priorities will have changed.

Consciousness survives and with it the essence of what we are and that consciousness has access to the memories of all lives and they can be examined.
Taking that into account one could say it is only our body which doesn't endure, nor would we want it to as over time it wears out, cells get corrupted and it looses vigor.

I think that we are multidimensional beings and that the material body is only a temporary host that permits a spirit to experiment the existence in this material world.
When the body cannot be the host of the spirit anymore, the spirit moves to another dimension. We could compare death as entering the dream world. In the dream world, we have a body too. But the afterlife dimension is not a self creation like the dream world.
Then, depending on the consciousness of a person, the destination from there may be different. Some may reincarnate into the material world, and others may go into different realities.
If the consciousness of the person is still strongly attached to the material existence, it's probable and logical that this person will be reincarnated into the material world again. It probably means that the person hasn't yet finished learning the lessons that reside into the material dimension.
I think this is the reason why some spiritualities focus on the importance of detaching from materiality in order to exit the reincarnation cycle, because detaching from the material world permits considering alternative dimensions of existence, which then may be open for the spirit.
There is a door which is closed for some persons and avoids them entering subtle dimensions : this door is in our own spirit, because it's our own false beliefs that shut it down.

There is an actual living 'body'. It looks and feels exactly like the body left behind on Earth. So far -so good, but I can't say I know exactly what happens after that as there will be some changes during progression in Spirit, and what exactly they are I can't say yet from personal knowledge.
I had a personal experience of actually meeting and touching a deceased loved one during an OBE and every detail of their 'new body' was exactly the same. That surprised me very much indeed. I did not know those things before that experience happened.
It sounds rather fantastic -but nevertheless, I would also like to mention that there were no more traces of the physical illness that caused their 'death'. No more lumps on the body.
