Changable moods/personalities

What does make others tick when they are kind to others, the next they are horrible to them, next they are kind again? Kinda like being two-faced.

What activates part of their brain to be kind, next they change into the dark side of themselves? (e.g dark thoughts of violence and sex)

Is it a mental illness, learned behaviour or just social conditioning?

Could be a few things: they fluster easily; high or low blood pressure; they aren't able to cope with sudden pressure; neurosis; sudden change of circumstances.

Could be any or all of the conditions you suggest, possibly also reflex.

It could be. However it could be just they wired their thinking wrongly in a wrong set of thought patterns. If they were desensitized to all forms of media, their perceptions could form in reality and may offend others and then not. Fiction and reality seem to be meshed together and sometimes people forget to separate them. Just like how the brain absorbs information from what you watch as a sponge. If you watch a lot of news or violence, then the brain may accept it as a form of expressing anger. If you watch a lot of sexual content, it might give you a perverse addiction to crave more.

Triggers, mental illness, emotional suppression, conditioning, fear, pain, resistance.. The list goes on. So not one thing unless you know the person your looking at and know their functioning and process really well, maybe inclusive of a some kind of diagnosis as well.
