The Mind illuminated by John Yates Ph.D
this book cuts most of the religeuos jargon out and gives detailed account of how meditation practice progresses.

"The Supreme Doctrine" by Hubert Benoit. He is a French psychiatrist who was paralyzed for some time and used this period to examine Buddhism from within a Western mind set. This gives a unique perspective on Buddhism and especially Zen, and the reasons as to how and why it is the supreme doctrine.
Reprints of the book were also published under different titles.

Thank you so much markings and redstone. And Jeremy. So many wonderful suggestions I will get round to trying them all. Was only looking into them and ended up falling in love with samana's PDF... so guess that's where I am starting lol. not quite what I was after but exactly what I needed!! Thank you all :)

Awakening the Buddha Within by Lama Surya Das. It's sort of for beginners but it's a great read. I enjoyed it a lot during difficult times.

I would say that books by the Dalai Lama and Thich Naht Han are the best beginning books that are easy to read.
