Now, I am not 100% vegetarian, but I do eat primarily plant-based/vegan I'd say about 90-95%. I have found some really yummy things that are easy!
Homemade sweet potato fries= cut them like fries. Add olive oil (I actually omit oil completely), seasonings like garlic powder, sea salt, pepper, thyme (delicious), and really anything. Be creative! I preheat oven to 425 and cook for about 35 minutes and broil for another minute or 2 to get them crispy. Good with organic ketchup and mustard or bbq sauce.
Spaghetti squash. You could use marinara sauce or just some seasonings with oil or butter. Or anything your heart desires!
Zuccinni noodles. If you have a spiralizer.
I also love making cauliflower "rice" and "pizza crust"
homemade hot chocolate daily
banana ice cream!
Beans with anything!
There is so much to explore!
I know we can't promote websites, but you can at least search "chocolate covered Katie" for inspirational recipes. She's all vegan! and really easy and delicious. She has recipes for anything!

Broccoli and cauliflower vegetable cakes sauteed in coconut oil with a side of quinoa pilaf with kale, sweet potatoes, carrots, red pepper, herbs, spices. A glass of lemonade.

Lunch: Thali with chickpea and cauliflower curry. Three samosas and a lemon drink @ Indian veggie cafe
Dinner: Lentil and potato curry with rice @ home.
Also had a pepsi max

Just made my cranberry wild rice soup with baby white organic sweet onions I found at Trader Joes. I love the smell of celery and onions cooking, it permeates the whole house. :) A little coconut cream and sherry to finish it off.
Breakfast: Blueberry granola in rice milk
Lunch: Brown rice 'sushi' bowl with cucumber, grated radish and carrots, avocado, sesame seeds, wasabi mayo and soy sauce.

Made some lemon thyme quinoa with roasted veg (carrots, onions, beets) and some raw Italian parsley on top for lunch.
Also drank my apple cider vinegar cocktail with cayenne.
Some linguini with pasta sauce and nutritional yeast for dinner.
