Many times a secretary or scribe was used by the bible writers. So all the NT was probably in Greek to begin. I don't know if anyone can be 100% sure.

Matthew was originally a tax collector for the Romans. He probably had to speak Latin to deal with them. There is a chance he did know some Greek to understand what the bosses told behind him
