Snack: Pink Lady Apple dipped in coconut nectar

Kamut noodles with spinach & brussle sprouts

& yesterday I also had, sweet potatoe fries with mango aioli, raw vegan fig bar, and saskatoon berry juice with beets, tumeric, cinnamon and other

Lunch I had a salad with mixed salad leaves + tomaotoes + beetroot + cucumber + celery + carrot + borlotti beans + green olives + mashed avocado and tamari/tomato thyme baked tofu

Dinner was a butternut squash + mushroom + cannellini bean and carrot soup with turmeric and coconut cream + nutritional yeast and Himalayan salt sprinkled on top

Greetings,

TODAY:

Breakfast: Corn flakes - Rice Dream Milk.

Lunch: Handful: walnuts, pecan, cashews. 4 crackers spread with: peanut butter and yeast paste. One big pear. Smallest tin of baked beans - cold from the tin.

Tea: 4 vegetarian sausages. Cabbage. Mashed potatoes + brown spicy sauce - vegetarian.

21.00 HRS: 1 Digestive biscuit. 1 Rich Tea biscuit. 1 Cup of Lady Grey Tea.

I'm 5'9" weigh: 10stone 4lbs (144 pounds) Age 73. Vegetarian for 43 years.

Breakfast...peach, grapes, and a pear with mixed seeds and bran flakes.
Dinner...2 vegeburgers with baked beans with garlic added. 1 Ciabatta bun, toasted lightly, some steamed green cabbage.
Snacks....tahini on seeded oatmeal biscuits. Some chocolate, and 2 Hovis digestives.

I'm new to vegetetarianism and have to eat quite a lot to keep hunger at bay!

Breakfast...bowl of raw oats (soaked overnight) topped with hazelnuts, grated apple, sultanas, shredded coocnut, soya yoghurt, small glass of beetroot juice

Lunch...veggie spelt pasta made with sweetcorn, tomatoes, broccoli, chickpeas, mixed nuts and vegan cheese

Dinner...pinto bean chilli with brown rice and avocado

Snacks...gluten free biscuits, dates

I just have to pause for a second and notice how very lucky we are to have this choice of good foods every day. We are very fortunate.

I agree, gratitude is important. It has taken me time to learn though and I grew up eating very uninspiring food. So I do understand the contrast aswell.
