Hi Anala, I buy my pecans in a fresh bag by the pound, no salt. Its a Good snack . Good luck on your recipe


I had a garden salad, egg flower soup, coconut latte. I made my kids portobello mushroom pasta ( Costco packaged). I ate a few of them for taste testing, but geesh, I think thats it for the day LOL.. Oh, two little packages of sriracha cashews from the dollar tree

We used to pick pecans off the tree when I lived in Texas. Pecans are naturally sweet. Texans call them pee'-cans.

I got some smoke flavored almonds yesterday. I normally don't like almonds but these are really good.

We had leftovers last night.

Burritos tonight.

Yup. That's how I pronounce them too. My parents are from Texas, born and raised.



Today's dinner ( Mind, I only eat once a day, so dinner is lunch as well). Anyways, I had egg soup, coconut latte, two cans of green beans, a small piece of steak and later on the day I stopped by a mexican market and picked up some fresh chicharrones , dipped in some Mexican white cream ...

Clover, ah, both of of my children were born in Texas. Even though they live elsewhere, they will never get away from their Texas roots. Texans are the best! And I do mean that. I lived in Texas for 13 years.

We didn't have burritos last night. I had an appointment with my doc yesterday and told her about my tolerance for corn. But I wasn't exactly sure it was true yet. She said I needed to get corn on the cob and try that. So I went down to our local vegetable stand and got some sweet corn (50 cents an ear!). We had corn on the cob, baked potatoes and a fruit salad with homemade yogurt.

So I ate corn on the cob last night and didn't have a reaction. Corn is on the menu again. I can't tell you how good that corn was after 7 years without. Still pinching myself.

My gf tortillas dried out! So instead of burritos, we will have a burrito casserole tonight.

Texas was a great place -- in the 80's and 90's that I remember. Spent most my summers there in the valley & Corpus area.. I definitely wouldn't go back now. Its changed. Sorry Lucky1! Congrats on eating corn again, Linen!




So Today I had my usual Coconut Latte and black berries. I am going to give the lattes a rest for a week, its been overkill. . I had leftover shredded beef or 'carnitas' from the Mexican store for breakfast with some Salsa Verde, thats kept my full all day. So I am going to fast until the morning. In the morning we are going to have a HUGE breakfast at one of my favorite home-style restaurants . I am there for their home made pumpkin pancakes -- BEST So thats all I am thinking about, will be dreaming about the pancakes till the morning

Hubby is going to grill some steaks, I will have I-a-ooie, hubby will have french fries (both leftover), hubby will have a raspberry shortcake and I will have a green salad. Glad that's settled.

I lived in Texas from 74 to 87. Some of my best memories as an adult are there. Texas will always have a part of my heart. I lived in Houston and San Marcus.

Thanks, Clover, I still have to be careful with the corn. It bloats me. Not used to it anymore.
