Wow...just performed a transforming miracle on leftover takeaway canton style Duck and very stale bread!
I made a powerful and restorative soup along with garlic bruschetta! In case you might also want to try something similar, here's how I did it.
Admittedly I had some key ingredients e.g. onion, fresh organic ginger + garlic, also organic beetroot + carrot. I lightly sauteed off some finely diced onion + peeled ginger before placing this into a pan that had the drained (mostly soy) juices of the duck dish. I diluted the juices further so that, once I added the diced carrot + beetroot, it was enough to cover and simmer for about 20 mins. or so (till tender) - adding a bayleaf for good measure!
When the veg was tender, I finished it off by adding the chopped up duck just to heat through along with a small, slaked solution of potato starch to thicken (so much nicer than cornstarch + no GM!). After about a minute of so, on medium heat, it thickens.
The bread was rock hard but I ran it quickly under a running tap before I started cooking. It then, eventually became easier to saw through and I grilled it on a low heat - rubbing some garlic into it. Wonderful!

I went to a birthday gathering, the host is part Aussie/part Thai so we feasted on beautiful home cooked Thai food. I’m not one for too much heat, but according to sources close to me, the papaya salad was to die for lol. Those that could manage the heat went back for seconds. Not I ..
