Ant, I do enjoy the fact that your dinner gives me an idea in the morning for our supper! Roast chicken you say! Sounds lovely!
Btw, I have to go run and thaw out some chicken.

I trust you enjoyed your roast chicken dinner,as much as i.
I have gotten out some pink ling for tonight,
and will be accompanied with boiled potatoes,carrots and peas,to appease.: )

Hubby had a dentist procedure so we have been eating soft foods for the past two days.
2 days ago he had a piece of the sous vide prime rib I did (and froze) some time ago. He loves those.
Last night we had tuna casserole and he had baked (pumpkin) squash. I had a salad.
Tonight we are on track again. Foil packed jambalaya.

Today, I had a bottle of BASIL SEED DRINK with HONEY.
The drink was almost identical of a drink I would get in Burma where they served it in a slop bag.

Last night we had leftover tuna casserole.
Tonight will be (premade) bbq baby back ribs for hubby and meatball sandwich for me.

Tonight I made a jazzed up impro meal from left over pork fillet from yesterday (that had herb stuffing and was wrapped in pancetta).
Into cubed potatoes and steamed cauliflower florets, I mixed in a prepared parsley and sundried tomato pesto, whilst it was still warm so would soak in better. I added some fresh lemon thyme leaves (left over from the stuffing.)
To the cubed cooked pork/stuffing/pancetta combo, I added some roasted red pepper strips, capers, chopped fresh fennel, lemon juice and some hot chilli sauce. It was a very enjoyable and tasty combo!
