Talk about eggs. I recently got this great tip to bake eggs with a mashed banana. Really nice combo! I added some cinnamon as well.
Was not 'dinner' though, but lunch!

I improvised a crab pasta salad. I made a spinach mayo (blitzing cooked spinach into bought mayo) and folded cooked fresh pasta shapes into this with lightly cooked cauliflower florets.

When cool I added some tinned haricot beans (not baked beans) + the fresh white crabmeat.

Incidentally, I don't describe my meals to boast - I detail them in case anyone feels like recreating them! This was another good combo (not attractive looking .... predominantly bright green....hence no photo).

Shrimp alfredo with a side of spinach. Did not tell the hubby it was made with soy cream until after he ate half a plate. He still liked it.

Trying out a recipe for rustic pizza. I've bought sourdough pizza dough and the filling is a mixture of spinach, ricotta cheese, parmesan, roasted red pepper strips, pine nuts and ham. Should be good!
