As for tofu, I'm not a big fan of that either ... but I love tempeh which is a reasonable soy equivalent.

Tofu takes a lot of time, to get the water out. You need to have patience. Correct me if I'm wrong and it can be prepared quickly.

I would love an answer to your question as well since that is the main reason that I do not have tofu at home ... preparation time ... though I do have tofu when I take-out meals during the pandemic (since I have not yet resumed indoor dining ).

It can be prepared quickly if you don't mind sort of soggy tofu

I have frozen tofu and then when it thaws it has a whole different texture. You can also press out a lot of the water. It almost feels like a sponge. I tear it apart and add it to spaghetti sauce.

Tempeh also has a lovely texture to it, with out all the water.

And there are thes cute itty bitty white mushrooms that are packed full of protein, if I remember right. We get them by the bundle at the Asian market in the big, big city.

Oh, I forgot, there is also TVP (dried, textured vegetable protein) it is dehydrated and is good for camping and makes yummy “sloppy joes”.

I just ordered some red lentil pasta from Amazon as lentils are a great source of protein for vegetarians (like me) and vegans. I also love my Tabatchinick low-sodium tuscany lentil soup.
