Lol, that's me and Mexican Clover. We've had so much of it (Mexican pizza 2 different ways, enchiladas & nachos) lately I'm so over it. I'm thinking a simple chicken stir fry tonight.

Oh, I'm just getting started on my Mexican food kick. Gone to Taco Bell (but does that even count?!)
I went to El Pollo Loco yesterday for my favorite: avocado double chicken salad tostada. I don't use the cilantro dressing because of the trans fats and other stuff - I just get lots of salsa. So good.
I just wanna say that I'm so exhausted from the extreme heat, I can't lift a finger to even make some rice!  |

Lol, that a riot Silver.
We're still hot but fall is just around the corner. Middle of next week temps start to top out at mid 70's. Bliss.
Just slivered up my chicken, I have some snow peas I need to use up and I'll throw some water chestnuts, a bit of peanut butter and some Szechuan stir fry sauce in to spice it up. Serve it over some rice because I need to get that used up in the fridge too.

Wash up is a snap because there are no pots and pans to wash!
I pulled out some antelope steaks. I'm thinking of making a pot of chili for tonight.
