Trying a new casserole called boeuf bourguignon (can't even pronounce it!). 3 lbs of red meat, 4 onions, a pound of fresh mushrooms, 3 1/2 cups of red wine, 3 cups of beef broth and various herbs and miscellaneous other stuff. It's in the crock pot and smells delicious!

linen53 that's one of my mainstays. What is a great thing to pop in but it is a labour of love and that is shallots. Oh the peeling and the unpeeling and so on involved to get the heart but do they melt in the mouth or what.

Brown rice with sauteed onions, garlic, and mushrooms, and steamed asparagus (along with pork chops for the boys).
I have to eat mushrooms every day...and asparagus a few times a week -- love them!

Ber-gin-yon. I think that's a pronunciation.
Hummus and carrots and avacado. I had yoga and so didn't want anything that needed preparation.

Thank you Belle! Now I can sound fancy to my husband when he asks what we are having for dinner!

I just put two homemade veggie pizzas in the oven. The boys only wanted broccoli on theirs, but I have broccoli, onions, and mushrooms (of course) on mine ;)
Please send out "bad weather" vibes to northern Virginia for me this evening; I want a day off from school tomorrow so I can make pea soup for dinner tomorrow night!

I don't have to cook tonight. My husband has to go to a meeting and they are providing dinner.
So I rummaged around in the freezer and found a kielbasa sausage I can stick on the George Foreman (indoor grill), bake a potato and finish it with a nice green salad.
