“Last Ditch Veggie Salad” (LDVS) with a scoop of tuna salad.

LDVS = chopped up all kinds of veggies before the end up in the compost heap.

Tonight, cauliflower, asparagus, sugar snap peas, carrots, cucumber, grape tomatoes. Very colorful!

Pork shoulder steak with boiled cabbage,shallots and potatoes.

Steak fried in coconut oil and leftover oil to go towards the sauce.

With the sauce also comprising of honey,lime,mustard and a dash of shiraz.

girlsearching, I hope you are taking notes! Your mom sound like an amazing cook!

We are having leftover salad to supplement our TV dinners. But, there is homemade chocolate cake! Shh, don’t tell Big John I suspect he has a sweet tooth!

My boyfriend made avocado, hummus, and feta grilled cheese sandwiches. We also had a spinach salad with blueberries, nuts, feta, and balsamic. I finished it up with some vanilla yogurt as dessert!

Here is the grilled cheese recipe if anyone is interested!

It was tasty! Although my avocado wasn't yet ripe so it was hard while I ate it. We made the grilled cheese one other time and we thought it came out SO tasty. This time around wasn't as great as the first time.

Okay we have leftovers falling our of our fridge when we open it so we will start attacking them for dinners. Tonight will be leftover Pea Dish.

Pea Dish

3 C thinnish white sauce
3 boiled eggs, diced
2 cans of tuna drained and separated
About 2 1/2 c plain potato chips, crushed and divided
Salt and pepper to taste
1 can Le Sueur canned peas, drained

Make the white sauce, add eggs, tuna and about 1 3/4 c of the potato chips. Add peas last and stir gently so they don't break up. Top with more potato chips. Bake until hot and bubbly. Approx 45 min on 350.

A word about the peas. Please do not use frozen or fresh peas. This dish, as you will discover it perfect with the canned peas. And if you can't find Le Sueur use any small sweet canned peas.
