Hubby and agree, potato and macaroni salad is just to much. We will go with a green salad instead.

But definitely poppers.

The jalapeno poppers turned out excellent. I will be making those again. Best part is I can make them anytime because you freeze them before cooking. So I can keep a ready supply in the freezer.

But I should have wore gloves to core out the jalapenos. My hands were on fire. I won't make that mistake again.

So today I was cooking for my sister in law who's in hospital. We've been doing shifts making sure she gets some food into her. The hospital wanted to put a feeding tube down her throat but she refused. They've already put an IV into her neck.

I decided to cook a traditional Scottish meal called mince and tatties. Tatties is potatos. But instead of mince I got some good quality beef already cubed.

Put into a pan of boiling water to instantly seal in the flavour then boiled it dry. Filled it up again with boiling water and boiled it dry again, using the sound of sizzling to tell me when it was time to take it off the heat.

Let it cool then using a razor sharp knife cut the cooked cubes into thin wafers. Fried some finely chopped onions in some olive oil. Added some fresh peas, a chopped tomato and the beef wafers. Sprinkled gravey graduals over it and covered with water. Stirred intermittently and topped up with water once to cook for a further 30 minutes.

Meanwhile boiled some new potatoes in salted water. Once that went dry added a little margarine and mashed for a good long time until it was nice and fluffy.

Put the beef stew into a flask to keep it warm and wrapped the mash potato in tin foil. At the hospital she looked rough but could hold her head up longer. Seems our constant effort to cook her tasty easy to eat food has worked. She refuses to eat the hospital food. Still about a week expected in hospital until she's strong enough to leave.

She liked my gourmet Scottish mince and tatties so I was happy it worked.

On the way out passed a bed with a woman looking dead surrounded by family crying. Life...

next meal to take to hospital will be a good lasagna with extra mushrooms, garlic and chopped tomatoes to go with the tomato sauce. good quality fresh n lean mince beef this time.

she's going through a rough patch again. now all those blisters have left open wounds and are drying up it's painful for her. bad enough when you got one but she got them all over.

still, if we weren't visiting every day it's be worse so we do what we can to make it easier for her.

Thanks for the update Aaron on your sister in law. Such a horrible experience. She'll enjoy your lasagna as I do over the internet each time you fix it.

I've put a corned beef brisket in the crock pot along with potatoes, carrots, celery and a diced up onion and covered it with beef broth.

I chose that because it's easy to fix with a bum leg.
