Most souls are not from the material plane and thus have no 'size'.
If you mean 'ghost', they typically are about the size of the physical body at death. As their boundaries are often fuzzy, they often seems a bit taller and wider (less than a foot).
Most ghosts seem unaware they can change their size, shape, or appearance with the use of a bit of energy. I speculate that what holds them bound to Earth also keeps them holding a shape similar to their physical form.
