Background
Genes and culture are believed to interact, but it has been difficult to find direct evidence for the process. Maybe it is not an increase in lactose intolerance, but rather increase in an awareness of the issue.

Also when one doesn't have the enzimes for all this Western grain and vegetarian diet, you just become increasingly more fatiqued and start to have deficiences even without the actual allergies or intolerances.
