Is changing food routines/diet okay to be hard?

Hii,

I drink an awful amount of coffee to keep my brain at peace (due to some condition I have less trouble with my own mind when drinking coffee) and I have issues with not eating meat as meat is my go to release of emotion. However I’ve tried to change this. I wanted to become vegan and only drink tea as extra. I came really far for someone so dependent (was vegetarian for a half year and lessened coffee for two weeks). However is it acceptable to be that hard that after that you get issues and have to go back? I really want it and am putting my efforts there regularly, but it just isn’t easy at all. While others say “just do it slowly” like building it up. But that doesn’t work as my mind doesn’t allow it.

So just the simple question mainly intended for validation:

Is it ok to be bad at changing my diet? And to lessen coffee?
