Tofu with mushrooms, onions, bell peppers and lo mein noodle caramelized a bit and put in a ginger miso broth. I made raspberry sauce yesterday and I might put it in the middle of a scone tomorrow morning.

A bagel with poppy seeds, sesame seeds, sunflower seeds, pepper jack cheese, fried onion, and fried jalapeno. :) Washed down with nice plain water.

Last night I fixed my Mexican meatloaf. Lol, the recipe was in one of my cookbooks. I accidently re-donated it to the thrift shop and lost this one recipe from that cookbook.
I had to find another identical one and buy it online. Thankfully it was only $3.86 including shipping. Well worth it. Now I have the recipe safely tucked in my personal recipe file.

My partner cooked! Yay! BBQ turkey burgers, sweet potato fries (in the air cooker) and cucumber, tomato salad! Yum! Gotta love it when someone else cooks.  |

I had nachos grande last night.
Tonight I have to find a casserole to use up leftover rotisserie chicken and leftover roast pork. I'm thinking burritos.
