Hi Lucky. I'm healing. I've started physical therapy now. Thanks for asking.

My hubby has shot a few ferel hogs in the past. Good meat. It's to much meat for just the two of us now. He has an Alaska fishing trip planned for next summer. I'm looking forward to fresh salmon and flounder.

I made rice and had it with some canned tuna in olive oil on it 😔

I have salmon defrosting in the fridge though so will have something a bit more substantial tonight!

I had my salmon this evening (popped into the pan with a dash of salt and dill, nothing fancy), some blanched spinach leaves (I do it in a mug with boiling water to minimise the things I have to wash up).

Also cooked the rest of my beef mince - quick meatballs cooked in pre-made sauce from the stores.

@bigJohn,Did you get chicken curry in? Glad I could inspire .. I never tried pineapple & haberno, I bet the peppers would really give it an extra kick. Ill have to keep that in mind!

Last night everyone had New York Strip steaks. That is my fav cut of meat to purchase. I braised tons of Kale because thats what my kids love. I braise is in a meat broth, olive oil, herbs/spices. I also made the munchkins a side of Spanish rice with it. I always make them an extra side ti fill them up ( I don't eat wheat/gluten/grains).



I just don't know what to do today. Do I surrender and get take out?? Well see!!

My mom cooks (when she feels like it ) lol which happens to be today. My my mom is making a Pot roast, pinto beans and macaroni and cheese. So that is what we will be having for dinner once the food is done.

Leftovers - some shredded BBQ chicken (the rotisserie kind you buy from the stores) and some boiled rice.

And many, many many cups of camomile tea O_O

Some great ideas the past few days.

I need to get some bell peppers used up so we will be having Philly Cheese Chicken subs.
