I was the kid that read books about plants and animals, even medicinal plants. I seem to keep being drawn to pagan/witchcraft things but this curiosity has to be kept under wraps because I'm in a highly Christian environment, though for some reason there is an acceptance of alternative medicine and I was thinking of working with herbs. Anyway... What do I do?

I think you need to do what you are being called to do. I would suggest doing some reading on Wicca and Witchcraft - authors such D.J. Conway, Paul Huson and Raymond Buckland. There are many paths of Witchcraft these days, one of which is Kitchen Witchcraft, Don't be scared to be who you really are, don't let people intimidate you - go for it

Just my two cents here but you could have spirit animals/plants that want to reach out to you. When ive been in unforgiving environments in the past ive developed subtle but rewarding relationships with the simple nature around me, mostly trees. Trees are generally very generous and can have an immense healing effect on people they grow close to. I think plants in general do.
As far as subtle literature goes, I practice Norse paganism and much of the literature surrounding that can be passed off as entertainment and/or academia. Even most runes and seidr can be brushed off with a "Im reading about ancient languages (or culture)." I think most of what christians hate to see is your stereotypical Baphamet, pentagrams, black candles etc.
