Sounds like something one of my former cats would do.

Yes, I've heard many stories from friends etc. describing this behavior from their kitty cats. It very well could be that.

I presently have 4 cats. Two of them are hunters. This is what I have observed about cats and their prey. They generally eat the head first. I have come across a couple of headless remains that my cat started but could not finish. I've also come across the remains of the entrails that my cat had carefully eaten around. When Bounder catches a bird, usually he'll eat it. But not always. He's left dead birds (and many moles) on my doorstep. I've been told that by some that they are gifts from the cat. I don't see it that way and I've had several stern talkings to him about leaving dead bodies on my doorstep to dispose of. The grossest are the partially eaten ones. But after 6 years at our new house, I'm not even squeamish any more when he decides after the hunt that he's not hungry after all and I have to dispose of the evidence. I used to be horribly squeamish and grossed out to see half eaten moles, squirrels and chipmunks. Sadly, it doesn't even gross me out any more. I just say a quick prayer over the dearly departed and scoop it up in my trusty blue doggie doo bags and dispatch.

I used to live in an apartment and our landlord would find headless pigeons and asked me if my cat had done that. I'd say no because my cat was mostly indoors. It's probably the stray cats around the area I'd say. Fast foward a few years. My cat left me "presents" minus their heads in a span of being out for a few minutes.

OK, I'm going to chaulk this up to somebody's cat that gets out every once in a while and somehow knows that it's me who's working and not any of the other 3 people who work the nightshift there.
