walnuts, apple, celery and cheese tossed (see what I did there?) in mayonnaise.

It originates from your country - I'm surprised you haven't heard of it.

I'd heard of Waldorf's but never knew what they were

The point of no return from absurdity was officially reached when megacorporations began asking us to
'like' them of Faceborg .

Um, so anyway ... breakfast .... rown rice and buckwheat pastas with
no-sugar spag sauce, hemp protein & cocoa drink, pepitas& sesame seeds

Did you put the tofu in a marinade first?

This morning I had two glasses of home made almond milk, with sesame and flax seed and cocoa nibs. A bunch of little dried coconut cubes, 250 grams of cherries.

Round lunch time (I was supposed to skip lunch to lose weight) I enjoyed 3 crackers with my first home made peanut butter. Yummie.

Tonight I will have deep frozen asian mix for stir fry with red kidney beans and hawaiian stir fry sauce and brown rice.

That will do for the day.
And lots of coffee and other drinks...

I made it with a honey, soy ginger sauce :) Didn't marinade this one.
I love almond milk! I buy it though, is it easy to make?

Almond milk is not so difficult to make. There are some video's on youtube that show you how. Here is one:

I use a soy milk machine to make my own. That is most easy. You just put the nuts in a fine perforated container, add cold water in the bin and start the proper program.
The machine will heat the water and then mix the nuts in the container. Because the nuts can't go anywhere, and because they are heated too, they are very well mixed. This gives a smooth milk. When it's done I scoop the pulp from the container into the milk because I don't want to waste that. The pulp is very nutritious too. But that's only with nuts, not with soy beans. Soy milk is creamy enough by itself and the pulp from that I use for spread on my bread.

I am going to try make almond butter in a food processor and then use that butter for almond milk. If you do it in a food processor the nuts are not heated so I guess that leaves the nutrients more intact.

But the soy milk machine is by far the easiest way to do it. That thing does everything for you.

That is very much the way I use my soy milk machine. And making your own milk is indeed much cheaper then buying it in the store.
I use 100 grams of beans or nuts for 1.2 liter of milk. Such a batch cost me about 20 to 30 cents for beans or about 1 euro for nuts ( hazel-, almond, whatever). And I too add vanilla and mix nuts together.
I let the beans soak overnight. You have to rinse them because they contain fytic acid. You have to do that with all beans that you cook yourself.
