B-12 In Mushrooms

White button mushrooms are a dietary source of vitamin B-12 -- OFFICIAL.

Wow! I'm glad to hear this. I like mushrooms a LOT

Tobi's tasty mushroom and Tofu recipe:
1) Block of Oak smoked Tofu cut into bite sized squares
2) carton of button mushrooms (if they are big, halve them, if they're tiny do them whole)
3) Tamari or soy sauce
4) mild curry powder.
5) a little oil

Put a little oil into a shallow oven proof dish or dish lined with non stick tinfoil. Put the mushrooms and tofu pieces in the dish, and sprinkle on the Tamari, and then curry powder. Toss them about so they all get coated. Cook for 10 minutes top of the oven on medium/ high, pre-heated (about 200) or can be done in a mini-oven or grill. Juice comes out of the mushrooms so it doesn't get dry, but a very little boiling water can be added a couple of minutes before it's cooked, and the liquid thickened with a little cornflour to make more sauce if needed.
Nice with brown rice. And so quick and easy. This would serve 2

Yes and only a few years ago it was found that shiitake mushrooms are a dietary source of vitamin D-3.
How many more sources of vital nutrients are there in the natural world (plants/fungi) that science has yet to discover???

That is so important for anyone Vegan, as D3 and B12 can be sadly lacking in a vegan diet.
I don't think Science has scratched the surface yet....

Good news indeed.
I've been told I need to take B12 supplements more than once by medical doctors, just on hearing of my diet. (vegetarian) Yet, every time I get a blood test, B12 levels come out okay. I'm no mushroom fan, but I agree, science has a lot more to discover. Still, will eat a few more mushrooms in the future.

If you are Vegetarian, and NOT vegan, then it's likely you get quite a lot of B12 from eggs or cheese? Or foods which contain them?

True, but here it's no eggs and minimal dairy. But maybe that's enough. who knows, really, which was kind of the point. My son who is vegan takes no supplements either.
