I love kale but only if there are no stems and it's been massaged for a while until glowing green and tender. Or sauteed in a buddha bowl or something

3 days of vegetarian meal prep conquered in 1 hour! Feeling radiant through the 12 hour ICU work grind.



-banana with almond butter

-overnight oats with unsweetened chocolate almond milk, chia seeds, mulled flax, strawberries, light honey, cinnamon

-cold veggie pasta I posted from before

-roasted green beans, beets, Brussels with sea salt and fresh cracked pepper in avocado oil

-spinach salad with sprouts, carrot shred, purple cabbage, mushrooms, quorn "chicken" patty and oriental dressing

-kombucha

-grapes blueberries

-sourdough rye crackers

Speaking of mangos....
My filipina mama dropped off a box of golden mangos and these sweet bean buns (not healthy) lol. Soooooo good.

Your mango mama is very good to you!! How nice *grins* I love those bean buns too, not savoury but not sweet, it's a mystery to me lol


For your food prep, I'm curious, does the food stay nice and fresh that long in the containers? I've always been put off by the idea it wouldn't be so nice by the time I got to Day 3.

I would say anything past 3 days would be a no go for me. But since I work 12 hour shifts that require a lot of mental and emotional balancing, the last thing i want to do is cook anything then go to bed lol. I have to meal prep for my self care so that i can do more healing things with the 2 hours i have at home until bed time

Ah okay, sounds good. I may give it a go this summer as I do find the prep time and all every day to be a deterrent to taking my own food, which I much prefer.

Omgosh Libbyscorp....I need to print everything you do out. What ambition you have. I need to do what you have done making up your meals like that. wow!

Where do you get all your food from?

I love almond milk but I can't have it anymore. I got severely sick last spring and I'm not one to go to the doctors but I finally had to so from early spring until a few months ago when I took my control back..I found some things that didn't help my health. Sadly, almond milk was one. I can strongly tout the value of drinking fresh juiced celery every morning. It did for me what no doctor and their bag of pills could do!
