That sounds really great Bohdiyana. And the one thing to understand too, is that the veggies and fruit that make up your diet are lower in calories than animal products are, so you'll need to eat a bit more to keep up your blood sugar. So where your plate used to have two veggies on it, either put a bigger pile on or add another variety.

And seasoning is really important to keep your taste buds intrigued. I find that my cooking has switched to using more Asian style spices. Curry powder, Five Spice Powder, a little more pepper, ginger, etc. I love Indian cuisine and we have a favourite restaurant called The Himalayan. Who knew one could live on PEI in Charlottetown and eat authentic Indian food! So lucky!


I don't know where you live, but in case you're in Canada or the USA, you could look in the international aisle of foods in your supermarket and look for a product by a company named Kitchens of India. They produce a couple of seasoning pastes that make fabulous curries. The one I like is called Hyderabad Biryani Paste (and isn't that a mouthful?).

I would sauce my veggies and after about five minutes, I add some coconut milk along with about a tablespoon of that paste and stir that around to melt the paste in. Then I'd add a cornstarch/water mixture (just a bit) to thicken it.
At some point in this process, I always add in a cup or two of precooked lentils for the protein and voila! Fabulous tasting curry! Pour it over some noodles or maybe a little bit of rice and you have a great meal. Make a big enough pot and you've got lunch for the next day too!

I'll have to try your friends idea of putting over pasta. That does sound good.

Have you ever tried Tahini? Wonderful stuff, good fats, lots of calcium and high protein. That on oatmeal biscuits would be a good idea for keeping blood sugar normalised.
