I would look up spanokopita and see if you would like to try it. It's a little hard to make in my opinion but it is worth it I think.

This is a really nice recipe. It's vegan actually but oh boy it's tasty! Takes about 10-15 minutes to cook.

Spelt Pasta (I use spirals) cooked al dente
Fry mushrooms, onions, and garlic, then add some organic vegan sun dried tomato pasta sauce, sprinkle black pepper on it. When served, sprinkle a few roughly chopped lightly roasted almonds on top.
Totally yum! And full of vitamins, protein and goodness.

Funny you mention it, I love spanakopita. I live in Greece so we have them regularly here! :)

Thank you for the recipe Tobi, sounds delicious! Haven't seen any spelt pasta around here but I will try my local health food store!

Well, I've been a vegetarian since June 1975 and I ain't never heard of
Spanakopita Please do enlighten me.

Adriana, is fish going to be part of your vegetarian diet or are you going to go down the road of never eating anything that once had a head?
