Favorite Vegan Recipes?
What are some your favorite vegan recipes? I feel like I make the same stuff over and over!! I need new ideas!! Thanks SO MUCH!

This is nice:
Wholewheat pasta spirals with tomato and garlic sauce and toasted pistachio nuts.
It also only takes 20minutes to cook
I use organic Spelt pasta but organic normal wholewheat is fine.
I also cheat and use a jar of tomato sauce with roast garlic which I buy! The one I buy is suitable for vegans.
Then lightly toast a handful of pistachios (keep an eye on them carefully so they don't burn!) When it's all cooked sprinkle the toasted nuts on.
This is nice with celery sticks and/or watercress.
Another one:
Smoked spicy Tofu and mushrooms. (use smoked Tofu)
Lightly oil a shallow baking dish. Cut the tofu into about 1/2" squares, sprinkle with Tamari or soy sauce, and a little medium curry powder. Toss them about in the oil. Cut small mushrooms into half. (Chestnut or button mushrooms are nice but you can use any) Then cook for about 10 minutes on 200.
The mushrooms will let go of some juice while cooking but you may want to add a dessertspoon of water if it begins to look a bit too dry.
Serve with Bulgar/Cous cous/or brown rice
