Went fishing. .....had a bunch of buddies over this evening. ....and had grilled Redfish on the halfshell!
We ate it in the backyard after the sun went down.....good stuff!

Braised Kale with Tomatoes, sauteed in Olive oil and chicken broth ( Caribbean/Spanish seasoning of course, ha) goes really great with Jasmine rice. I ♥ Kale.

Didn't end up having the peppers last night. Ended up having chicken strips that I had frozen previously (reheated of course) and Hasselback potatoes in my new air fryer.
So I will have the peppers tonight for sure.

Chicken, Potato, And Tomato casserole in the crock pot of course. Adding typical Spanish savory seasoning b/c its how I role, and the lemon juice really gives it an extra kick.
Served with white Jasmin rice, comforting food for a 'meh it's Tuesday' kinda day. Oh, I got red meat out for burgers tomorrow! *bangs forks on table*

my roommate and I made some veggie burger patties from scratch and had a burger each and some corn on the cob. it was super tasty
