Not sure if Indian food is your type, but it is largely vegetarian - so I would suggest search for Indian recipes on the web. A lot of it can be made with very little spices. There are tons and tons of vegetarian options. South India food especially is mostly vegetarian and also less spicy.

Each Indian meal consists of rice/wheat bread (carbs) + daal (lentils) + vegetable curry (veggies).
So one gets a good balance of carbs, proteins (lentils and beans) and vegetables. A very well balanced vegetarian diet that does not lose out on nutrition.

Yes, India is a great place for vegetarian food.

There are over 400 million vegetarians in India!

Holly, I tried your link, it did'nt work, I'm not sure what Quorm is, I buy veggie hamburger, and meatballs, it took me awhile to find Veggie "meat" that I like, as some I tried tasted too much of real meat, even after 20 years I remember what meat tastes like.

My dear wife grows lots of pumkins. The seeds have lots of zinc (which helps with prostate trouble, if you're an older man!), but we also boil the inside of the pumkin and then cook in small bits in a curry sauce. Just another idea...

i think the most important thing you can do is to not try to "replace" meat with vegetables - i.e., replacing chicken in a salad with vegetarian chicken replacement.
instead, try to think of the vegetables you love, and how they would work best together. for example, maybe you love mushrooms - why not try a mushroom stew or risotto? or mushrooms with a nice thick sauce over some brown rice, with salad.

gwenyth paltrow's cookbook is great (a little pretentious, but if you can get over that, it's got really great recipes, even non vegetarian ones)

also remember that not all cheese is vegetarian!! look into it if you're interested.
