There are many things out there other than a demon and an angel. I am not sure in what realms you travel but you can meet a lot of a different kind of spirit...

As general rules, if you're not sure, avoid anything that has grey energy because their energy has been blocked and you don't know why... red energy because it's usually related to anger(unfortunately I have a lot of red in mine and it's not helpful for a story keepers) and the worst black energy... the color of dark energy... those type of energy can hurt you or attach to you... if you ever get hurt in the spiritual realms, purgatory or any of the other... you will feel it when you get back in your body ... if you die or your thread loose connection with your body... well your body will never get out of that coma if they keep you alive artificially...

now for what you keep seeing.. a lot of things match this description due to many things can be grey(block energy) with pointy ears are slim ...actually, grey energy is usually not fat energy since it has been blocked. Most of the time they just exist until they vanish... this their punishment but some may have been blocked just for a small period of time... it depends on a lot of things... Would be nice if you can provide more information like a smell or the realms you travel in...

Now the reason why you never really see angel or arc angel is that they are really busy... time to time you may meet dead without even knowing this is her... she is so busy(sad)  but so nice... and yes "she" because before we start recording history she was human... when your time will come, ask her to tell her story, this is really interesting and sad, she deserves to be reunited with her child. And she always takes time for people she escorted... doesn't matter how busy she is, she will take the time you need, she will protect you and you will feel her love and comfort during your trip to purgatory... don't be afraid of her weapon, she only uses it to protect you. She really understands the pain you will be, the feeling of losing your loved one and how scar you will be... she loves all of us with the love only a mom can provide... this is why she got the job after all...

The sad part is that the entities you meet his right... the ratio is really close to that 70 number it told you(sad)  but there is nothing really we can do about that and if this is god will there must be a reason... I am not too worried about the ratio, really nice people help to keep it balanced... in time you will meet them... it may be already the case and you don't know... they don't like to attract too much attention(smile) 

If that spirit keeps coming to you, ask him why is he grey... also wild guess ask him if he can describe what a glib is... don't ask him if he is one because he already lies to you... and don't take his answer for granted for the grey due to the same reason... hey it can be interesting to learn what he has to say;)  but again this is only a wild guess and it's hard to be sure with your description...

For the daemon part... I have a hard time to believe him because demon don't usually have there energy blocked and most people that meet them usually know they did because the experience is not fun at all... you would end up traumatized... they will feed on your energy and try to destroy you or attach to you... trust me you would know...

So have fun with your traveling and good luck with that thing:) but you don't seem in imminent danger so it should be ok:)
