I used the recipe from the Silver Palate Cookbook. Here is the recipe.

That's about the recipe I started with. Tahin is very healthy. But I only started making my own hummus a few months ago. And it's been about six years since I stopped eating meat. So it did take me a while to get there.

My favorite recipe is like this:
350 grams cooked kidney beans (150 gram dry, soak overnight, cook 60 minutes)
250 grams peanuts or cashews
6 tbs arachid oil
200-250 grams water
95 grams indian curry paste (tandoori, vindaloo, etc.)
3 tbs soysauce
Flip everything in the foodprocessor and turn it into a crunchy pulp. That's all.

Another one, so sweet:
200 gram cooked soybeans (90 gram dry, soak overnight, cook 40 minutes)
120 gram almonds
2 tbs canola oil, or any other oil at hand
10 ml lemon juice
120 gram extra sweet sugar
120 gram regular sugar
75-100 gram water
Again: flip everything in the foodprocessor and turn it into a smooth pulp.

These recipes cost me between 2 to 6 euro per kilo. That is very cheap. Cheaper then cheese and cold cuts. And that's how it's supposed to be.

I'm sure you can make good hummus with beans and cauliflower as well. I also make my own chocolate paste with cocoa and soybeans. But that is still under construction....
