If you don't mind the taste (it can be an acquired taste) then Kelp added to cooking can be very nice. I would say add it when you turn the heat down to simmer, or for the last 5 minutes or so of cooking. It's nice in a savoury soup or stew.
There would be no harm in making capsules to swallow with something like Kelp however. Just that you'd probably have to take 10 capsules a day or so. No problem really if you have a couple a few times when you drink some water.
