What a wonderful visit from your Dad!
My father in law is Like your Mom with him asking for my deceased mother in law. He is in a dementia care facility. We learned to change the subject or tell him she's fine, not here, somewhere else. It's very difficult. I can see why you would not want to tell her about your Dad's visits.
