What people refer to when they use 'fairies' varies greatly. Some mean flower fairies, others the small beings that were mentioned by someone else here. Actually these flower fairies are taht small I believe.
To me the Fae, Faerie, Fairie are the beings from the Mists of Avalon. The beings related to the Irish stories, connected to hawthorn especially.
The Fairies have a very strong relationship with nature, so if you want to work with them it is good to be environmentally friendly, go to the bottle bank, separate plastic and green garbage and so on.

Leaving food out for the Faeries is a token of respect. A gift. They don't eat it as they don't have 3D bodies, but they draw energy from it for sure!
You can -and actually should- also leave something that is meaningful to you as a gift when you have worked with a tree. Some tobacco can do or something else as long as it isn't plastic or toxic.

They are still there, but withdrew when people became disrespectful of them, animals, and nature, which basically began to happen when Christianity came to Europe and people's deep connection with nature was severed.
It used to take quite some time to get them to trust as their trust in humans was damaged, and quite rightfully so.

They're not, however, spirits of the land. That are Spirits of Place and there's also Devas.
