The Moosewood Cookbook.

There really are so many - Ten Talents, also, Deaf Smith...
There are so many good Tofu books and 'Vegetarian Epicure' is fantastic.
Then you have so many Indian cookbooks!!

One book that you must not miss: River Cottage Veg Everyday by Hugh Fearnley-Whittingstall.

The Higher Taste, and Food for Thought, sorry unable to post links yet, but there are a couple with the same title as the latter, it is the less common one I used to have a copy of, I recall the egg free apple sauce cake, and soda bread, both done using the microwave were good, also paneer recipes from the Higher Taste were good.
