Make my own freakin' Vietnamese fresh rolls
Was feelin' herby today 🌱👌❤ I'm so glad I discovered these rice wraps! You can put anything but i went quite traditional like what is from a pho restaraunt. My first few rolls were messy and awkward but towards the end, I got so good at it, I was sad all the goods were gone lol Calls for butter lettuce but I used spinach/kale Fried tofu slices Cold rice noodles Carrot shreds Sprouts Cilantro Thai basil Mint Soak rice wraps in water, spread out once gooey, wrap it all up like a burrito! Mmm! And peanut sauce for dipping. Could use sweet chili as well. |

Portabella mushroom fajitas
The big mushroom really makes a satisfying bite to sink your teeth into. It helps when I feel like having meat lol 2 mushrooms sliced 1 bell pepper, I chose 2 colors Half an onion Zucchini and yellow squash Fajita seasoning Slice up some avocado and tomato... squeeze some lime over the top before you wrap it up in the tortilla. I like hot sauce :) Really easy and takes 20 min!!! |

Growing up with an Asian mother had it's benefits lol. Like always going to Asian markets, experiencing more authentic Asian cuisine and getting to taste all the lovely veggies/fruit.
Can not get enough of Chinese broccoli! It's always been a favorite of mine. Steamed and dipped in oyster flavor sauce. Did it different today. 1 package of it makes enough for 2-3 people. It's kind of a pain to go through each leaf and make sure it's washed thoroughly but it's worth it in all ways. No one wants a bite of gritty dirt lol. Olive/sesame oil 5 cloves garlic Good chunk of ginger Low sodium soy sauce I usually like it a bit firm still and bright green but I have my daughter and cooked it down softer for her. Brown jasmine rice :) some oyster flavor sauce and siracha for me. Prefer to mix it all up! Gives me so much joy to eat rice and greens. Like home or something lol. Also used chic'n cubes made from mushrooms. |
