It depends, if you are just starting you can do anything between drawing just one card and interpreting it for a longer time, to drawing a three card spread or some of the popular spreads and interpreting them as well. It takes practice, do what feels right to you. As long as you are willing to invest time to read them, it should be good.
If you only draw one card for the other person and try to read just that one card, it can tell you a lot itself. Then you can draw more cards depending on what more you want to know.

No, I never read any traditional card meanings. Like never. If you feel it is scared and avoiding something. Then that's it.
