The following are the principle prayers for Protection and Health:

Protection: Shema Yisrael Hashem Elokeinu Hashem Echad
Health: Shema Yisrael Hashem Elokeinu Hashem Echad

Translation: Hear, Oh Israel, The Lord is our God, The Lord is One.

There are many many many many many many many other prayers for both of these but the Shema is unquestionable the principle jewish prayer for pretty much anything worth praying for.
