I was wondering if you guys had any suggestions for books, informative websites, etc so she and I can both lean something new. It is much appreciated.

Both of these books helped shaped the modern conceptions of fairies and other kinds of invisible folk. The only caution is to remember that they are written in Victorian times, or Post-Victorian era, so they reflect certain biases about gender, race and class that were prevalent in many writings of the time. So remember to not take the author's word as gospel, and read and research more, and don't pay too much attention to the author's theories, as they are mostly speculations.

Miss McCoy has a notorious reputation for being loose with facts, and heavy with white-wash and misrepresentation. I would recommend that the OP steers clear of new age books, until they have a better grasp on traditional folklore concerning the fair folk.
